For two months this summer in Lugano, Executive Chef Mauro Grandi of THE VIEW Fine Dining will be hosting special guest, German Chef Björn Van Den Oever and his fusion cuisine.

This creative and eclectic young chef is a traveler who has experienced many flavors and colors from all over the world. Chef Bjorn Van Den Oever is German, yet his professional training is almost totally oriental. At the age of 23, he left Germany to explore, spending 7 years in Asia, 2 years between Dubai and Doha and finally arrived in Zanzibar in January of this year, as the Executive Chef of Diamonds Star of the East and Diamonds La Gemma dell ‘Est.

The result of his exciting journey is an innovative cuisine that pays tribute to the best of what nature can produce, seasonality and the skills of the best gourmet producers.

 

This summer at THE VIEW Fine Dining, the menu will include his delicious dishes such as “Rombo with cauliflower and sultana cous cous”, inspired by typically African spices, middle eastern ingredients like cous cous and cauliflower from Europe. The “Foie Gras”, risotto with soya beans, smoked eel and nori seaweed” combines French and Asian cuisine, while the Tuna cooked in 2 ways is influenced by Japanese cuisine.

The snacks he proposes as appetizers are just as carefully researched and unusual, like for example the lamb tartare, the shrimp cevice, the spinach tempura or the chickpea balls.

Chef Björn Van Den Oever’s fusion dishes are paired with the best local and international wines carefully selected by our Sommelier Mario Miranda.
